Its oil contains polyunsaturated fat, with approximately 80% of omega-6 (linoleic acid) and 12% of omega-9 monounsaturated fat (oleic acid).
Studies have shown that safflower oil can help lower blood sugar levels by acting on the glucose-regulating hormone, in addition to influencing insulin levels.
